At least through the GUI, the bundled mail client does not appear to support secure connections. As a result, I am unable to set up an account with my Exchange mail server. Is there a way to do this with the bundled mail client, or does it require installing a different one? If so, which and how?

I can't speak to the bundled version, but if you get nowhere with that, then I'd recommend Thunderbird (macles install instructions here), which does support secure connections and imap.
